Vegetarian Chocolate Bean Chili

Excited, not afraid to hide it!

Whenever I manage a vegetarian version of a dish that’s as good or even better as the original, it always gets me really psyched up. This is one of them: a Chili sin Carne (a Chili without Meat) or my veggie chocolate bean chili recipe. Yes, you heard me right. Chocolate & Chili. Just linger on that thought for a moment. It’s good, isn’t it?

Then, when you’ve decided to start cooking, put on your favorite lazy sweatpants, because this is comfy food as comfy as it can get. Warm, hearty and flavorful. With a hint of cinnamon, rich chocolate and a punch of chilipepper, this makes a delicious bean chili.

Serve it with your favorites, for example tortilla, rice, cilantro, lime and a big dollop of yogurt, crème fraiche or sour cream. Yes, more please!

Ingredients
  1. 1 Red Onion
  2. 2-3 Garlic Gloves
  3. 1 tsp Cumin Seeds
  4. 1 Red Chilipepper
  5. 1 tsp ground Paprika
  6. 1 tsp dried Oregano
  7. 1 pinch of Cinnamon
  8. 1 Carrot
  9. 1 Parsnip
  10. 2 Bell Peppers (red & green)
  11. 2 sticks of Celery
  12. 1 can Chopped Tomatoes
  13. 2 cans Beans (kidney, butter, black or a mix)
  14. 1 1/2 ounces (50 gram) 70% Dark Chocolate
  15. pinch of Salt & Pepper
  16. Optional: tortilla's, rice, lime, fresh cilantro and a big dallop of yogurt, sour cream or crème fraiche
Instructions
  1. Start by preparing all the veggies. Finely chop 1 red onion, 2-3 garlic gloves, 1 chilipepper, 2 sticks of celery and 2 bell peppers. Peel and chop 1 carrot and 1 parsnip.
  2. Fry the chopped red onion and garlic in a hot pan with oil, until nearly brown.
  3. Add all dried spices & seasoning (1 tsp cumin seeds, 1 chopped fresh chilipepper, 1 tsp ground paprika, 1 tsp dried oregano, 1 pinch of cinnamon). Let fry for a few minutes.
  4. Add the chopped veggies (1 carrot, 1 parsnip, 2 bell peppers en 2 sticks of celery) and cook for 10 minutes.
  5. Add 1 can chopped tomatoes and 2 cans of beans of your liking. Reduce the heat and cook for 30 minutes more.
  6. Add 1 1/2 ounces (50g) of 70% dark chocolate, broken into pieces, and stir for 5 minutes until the chocolate has melted. Season with a pinch of salt & pepper.
  7. Serve with for example: tortilla's, rice, lime, fresh cilantro and a big dallop of yogurt, sour cream or crème fraiche.

Lebanese Tabbouleh Salad

Super-Green!

Tabbouleh (also known as Tabouli) is a healthy green authentic Lebanese salad. It’s made from bulgur, tomatoes, finely chopped parsley, mint, and onion, seasoned with olive oil, lemon juice and salt.

Highly nutritious with all the parsley; which is rich in vitamins A, C and K, and packed with flavonoids and antioxidants. If you want a gluten-free version, try substituting the Burgul with Quinoa. 

In traditional Lebanese cuisine, Tabbouleh is usually served along with mezze, a selection of small dishes served at the beginning of a large-scale meal. It can be eaten in pita bread, scooped onto pita bread, or eaten traditionally with a fork.

Ingredients
  1. Bulgur (1/2 cup)
  2. Olive Oil (3 tbsp)
  3. Fresh Flat-leaf Parsley (2 cups finely chopped)
  4. Fresh Mint Leaves (1/2 cup finely chopped)
  5. Spring Onions (4 or 5 finely chopped)
  6. Cherry Tomatoes (10, cut in wedges)
  7. Fresh Lemon Juice (1/2 cup)
  8. Salt & Pepper
Instructions
  1. Stir together bulgur and 1 tablespoon olive oil in a heatproof bowl or pan. Pour 1 cup boiling water over, then cover with a lid and let stand 15 minutes. Drain in a sieve, pressing on bulgur to remove any excess liquid.
  2. Finely chop the flat-leaf parsley, mint and spring onions. Cut the cherry tomatoes into halves.
  3. Mix the bulgur with parsley, mint, onions and tomatoes. Sprinkle olive oil, lemon juice, salt and pepper on top.
  4. Enjoy!
Notes
  1. If you want a gluten-free version, try substituting the Bulgur with Quinoa.

Bulgarian Shopska Salad

Shopska Salad Bulgarian

When I visited Bulgaria a couple of years ago, this was my favorite food discovery: Shopska Salad. I think I ordered it almost every day, yum! Although it seems such a simple salad it is bursting with wonderful flavors. It’s just so fresh and delicious.

This traditional Bulgarian salad is popular throughout the Balkans and Central Europe. Made from fresh tomatoes, cucumber, peppers, onion, parsley, sirene (white brine cheese), salt and a light dressing of olive oil and vinegar.

The preparation of Shopska Salad is exceptionally easy and fast. The salad can be served as a starter or as a garnish to accompany a main dish. Please enjoy, or as the Bulgarians would say: добър апетит!

Ingredients
  1. 3 Large Tomatoes or a handful of Cherry Tomatoes
  2. 1 Cucumber
  3. 2 Roasted Peppers
  4. 3 Spring Onions
  5. Some Fresh Parsley
  6. Salt
  7. Olive oil
  8. Red or White Wine Vinegar
  9. Sirene (white brine cheese, 3.5oz/100g)
Instructions
  1. Chop the tomatoes, cut the cucumber in slices and cut the roasted pepper in stripes.
  2. Finely chop the spring onion and parsley.
  3. Mix all the ingredients. Add salt, olive oil and vinegar according to your preferences and stir.
  4. Finally grate cheese over the salad.
  5. Enjoy!
Notes
  1. If you can't find sirene, you can also use sheep cheese as a replacement.
