Sometimes it’s the most simple recipe that really shines. The sweetness of grilled figs stuffed with creamy goat cheese. A match made in heaven!

Serve while the figs are still warm, as an impressive first course. Add some watercress or arugula to make a lovely salad. Or replace the goat cheese with ricotta or yogurt for a luscious dessert. If you like a twist, you can also replace the honey with balsamic glaze (In a small saucepan simmer one cup balsamic vinegar and 2 tbsp honey over medium heat, 10 to 15 minutes, until reduced by half and balsamic is thick and syrupy).

All there is to them is cutting a pocket in some figs, stuffing them with goat cheese, add a crunchy walnut, grilling until softened and then finish with a drizzle of honey. Absolutely delectable!

Ingredients
  1. 4 Fresh Figs
  2. 4 tablespoons crumbled Goat Cheese
  3. 4 Walnuts
  4. Honey
Instructions
  1. Preheat your grill to medium-low heat, about 300 degrees.
  2. Cut two slits into the top of each fig, about two-thirds of the way down to the base (x-pattern / deep cross), and then give them a gentle squeeze to open them up slightly like a flower.
  3. Stuff each fig with about 1 teaspoon of goat cheese. Top with a walnut.
  4. Grill the figs for 6-8 minutes, until they are softened and brown slightly.
  5. Arrange the figs on a serving plate. Drizzle with honey. Serve immediately.
  6. Enjoy!
Notes

Nothing says summer like biting into a juicy ripe peach. This favorite summer fruit deserves a turn on the barbecue. The grill brings out the natural juiciness and intensifies the deep summer sweetness of the peaches. One of the easiest ways to impress a backyard full of BBQ friends. 

Serve the grilled peaches as a side dish, in a salad (toss mixed greens and place grilled peach halves all over) or as a delicious summer dessert. Healthy, gluten free, no refined sugar!

Ingredients
  1. 1 cup Balsamic vinegar
  2. 2 tablespoons Honey (optional)
  3. 2 ripe Peaches, halved and pitted
  4. 4 tablespoons Mascarpone
  5. 4 sprigs fresh Mint
Instructions
  1. In a small saucepan simmer one cup balsamic vinegar (and 2 tbsp honey if you like it sweet) over medium heat until reduced by half and balsamic is thick and syrupy, 10 to 15 minutes. Set aside to cool.
  2. Heat grill to high.
  3. Halve and pit peaches; brush both sides with oil. Place the peach halves, cut side down, on the grill. Grill both sides until golden brown and just cooked through.
  4. Top each with a teaspoons of mascarpone, sprinkle over balsamic reduction and garnish with mint leaves.
  5. Enjoy!

Start off with a perfect ripe pineapple. Picking a perfect pineapple can be tricky. The leaves on the crown should look green, healthy and fresh. The pineapple should feel plump and firm. You can choose your pineapple based on the ease of pulling out a leaf from the top.

Fresh pineapple is an excellent source of manganese and Vitamin C, so delicious and nutritious on its own! But to turn it into a mouthwatering summer BBQ dessert, try grilling it with and serving it with some whipped coconut cream on the side. Fun for summer parties!

Ingredients
  1. 1 Pineapple, ripe
  2. 1 tbsp Cinnamon
  3. 1 cup Coconut Cream
  4. (Optional: brown sugar/ ice cream)
Instructions
  1. Whip the coconut cream and set aside in little bowls.
  2. Cut the pineapple into 6 wedges. Make sure to slice off the hard middle core.
  3. Prepare a hot fire in a charcoal grill, or heat a gas grill or grill pan. Grill the pineapple pieces, on each side, until tender and golden (about 3-5 minutes).
  4. Sprinkle over some cinnamon and serve warm with whipped coconut cream on the side. Enjoy!
Notes
  1. If you're a real sweet tooth, sprinkle some brown sugar on top.
  2. Also delicious with a scoop of ice cream on the side!
