Vegetarian Chocolate Bean Chili

Excited, not afraid to hide it!

Whenever I manage a vegetarian version of a dish that’s as good or even better as the original, it always gets me really psyched up. This is one of them: a Chili sin Carne (a Chili without Meat) or my veggie chocolate bean chili recipe. Yes, you heard me right. Chocolate & Chili. Just linger on that thought for a moment. It’s good, isn’t it?

Then, when you’ve decided to start cooking, put on your favorite lazy sweatpants, because this is comfy food as comfy as it can get. Warm, hearty and flavorful. With a hint of cinnamon, rich chocolate and a punch of chilipepper, this makes a delicious bean chili.

Serve it with your favorites, for example tortilla, rice, cilantro, lime and a big dollop of yogurt, crème fraiche or sour cream. Yes, more please!

Ingredients
  1. 1 Red Onion
  2. 2-3 Garlic Gloves
  3. 1 tsp Cumin Seeds
  4. 1 Red Chilipepper
  5. 1 tsp ground Paprika
  6. 1 tsp dried Oregano
  7. 1 pinch of Cinnamon
  8. 1 Carrot
  9. 1 Parsnip
  10. 2 Bell Peppers (red & green)
  11. 2 sticks of Celery
  12. 1 can Chopped Tomatoes
  13. 2 cans Beans (kidney, butter, black or a mix)
  14. 1 1/2 ounces (50 gram) 70% Dark Chocolate
  15. pinch of Salt & Pepper
  16. Optional: tortilla's, rice, lime, fresh cilantro and a big dallop of yogurt, sour cream or crème fraiche
Instructions
  1. Start by preparing all the veggies. Finely chop 1 red onion, 2-3 garlic gloves, 1 chilipepper, 2 sticks of celery and 2 bell peppers. Peel and chop 1 carrot and 1 parsnip.
  2. Fry the chopped red onion and garlic in a hot pan with oil, until nearly brown.
  3. Add all dried spices & seasoning (1 tsp cumin seeds, 1 chopped fresh chilipepper, 1 tsp ground paprika, 1 tsp dried oregano, 1 pinch of cinnamon). Let fry for a few minutes.
  4. Add the chopped veggies (1 carrot, 1 parsnip, 2 bell peppers en 2 sticks of celery) and cook for 10 minutes.
  5. Add 1 can chopped tomatoes and 2 cans of beans of your liking. Reduce the heat and cook for 30 minutes more.
  6. Add 1 1/2 ounces (50g) of 70% dark chocolate, broken into pieces, and stir for 5 minutes until the chocolate has melted. Season with a pinch of salt & pepper.
  7. Serve with for example: tortilla's, rice, lime, fresh cilantro and a big dallop of yogurt, sour cream or crème fraiche.

This easy, fresh and colorful salad is packed with flavors!

Beans, bell pepper, tomatoes, mango, corn, organic brown rice, lettuce, avocado, lime and a big dollop of sour cream and guacamole. A Whole Bowl of Deliciousness!

Feel free to have a play with the ingredients. For example add chili pepper, red onion, cilantro, cheddar cheese or tortilla strips. Ingredients
  1. Organic brown rice (2/3cup/ 5.2oz/ 150g)
  2. Some Lettuce for the base
  3. 1 Avocado, sliced
  4. Beans
  5. 1/2 Red Bell Pepper
  6. 1/2 Mango, sliced
  7. Some Corn
  8. Some Cherry Tomatoes, sliced
  9. Sour cream / guacamole (or any dressing of your liking)
  10. 1 Lime
Instructions
  1. Bring water to the boil in a large saucepan or pot. Add the rice, reduce the water to a simmer and cook for 8 to 15 minutes, or until the rice is tender but firm. Drain the rice.
  2. Slice the red bell pepper, mango and cherry tomatoes. Halve the avocado, remove the pit, scoop out the centers using a spoon and cut the avocado into slices.
  3. Assemble the bowl (see recipe photo): 1/5 rice, 1/5 lettuce and avocado,1/5 beans and bell pepper, 1/5 mango and corn,1/5 tomatoes. Top with a big dot of sour cream, guacamole or dressing of your liking. Sprinkle over some lime juice or garnish with a slice of lime.

A healthy salad that is super simple to put together and can easily be made in advance. Filled with yummy colorful ingredients like roasted eggplant, zucchini, yellow bell pepper, marinated mushrooms, cherry tomatoes, olives and feta cheese.

Yes, you will love this salad. It’s a genuine crowd-pleaser. Make it for your next dinner party or potluck gathering, people won’t be able to resist. Try eating this without a smile on your face ;)

(You can make this dish gluten-free by swapping out the couscous for quinoa.)

Ingredients
  1. Couscous (1 ½ cup)
  2. 2 Garlic Gloves
  3. Olive Oil
  4. 1 Eggplant
  5. 1 Zucchini
  6. 1 Yellow Bell Pepper
  7. Mushrooms (10)
  8. Kecap Manis (3-4tbsp)
  9. Cherry Tomatoes (10)
  10. Olives (green olives and/or black olives such as Kalamata)
  11. Feta Cheese
  12. Baby Spinach Leaves (handful)
  13. 1 Lemon
  14. Salt and Pepper
Instructions
  1. Bring 2 ½ cups water, 1 teaspoon salt and ½ tablespoon oil to boil in medium saucepan. Stir in 1 ½ cup couscous. Remove from heat. Cover; let stand until water is absorbed, about 5 minutes. Fluff couscous with fork. Set aside.
  2. Finely cut 2 garlic gloves. Cut the eggplant, zucchini and bell pepper into slices. Add some olive oil, the chopped garlic, eggplant, zucchini and bell pepper in a grill pan. Roast until tender. Remove, set aside.
  3. Add 3-4 tbsp kecap manis to the mushrooms. Bring to heat in a pan, cook until tender. Set aside.
  4. Quarter the cherry tomatoes. Halve the olives. Crumble the feta cheese.
  5. Gently mix all the ingredients; baby spinach leaves, couscous, eggplant, zucchini, yellow bell pepper, mushrooms, cherry tomatoes, olives and feta cheese. Season with salt, pepper and some fresh lemon juice.
  6. Enjoy!
Notes
  1. Can be made 1 day ahead. Cover and refrigerate. Let stand 30 minutes at room temperature before serving.
  2. Gluten Free: use quinoa instead of couscous to make this recipe gluten free!
